    Slice the ginger, and cut the green onions into sections; set aside.

    Clean the chicken wings thoroughly, then deep-fry until golden brown; set aside.

    Heat 100g of salad oil in a wok, add ginger, green onions, and garlic, sauté until fragrant. Add the Oil-Braised Crayfish and stir till fragrant, then pour in beer and water.

    Add the fried chicken wings and simmer for about 10 minutes until cooked through and sauce thickens. Plate the wings.

    Drain excess solids with a fine sieve, and pour the sauce over the wings.
